Currently most standard sanitation testing utilizes systems that detect ATP. Detecting ATP is ineffective. The reason is that ATP is produced by all organic matter and is not indicative of sanitation, but rather cleanliness. A positive ATP test could indicate that organic matter was present, such as tomato juice, not knowing whether bacterial contamination is present. The detection level of most ATP systems is stated by the manufacturer as greater than 5,000 cfu of pure culture.

An additional method for sanitation testing is traditional culturing. Culturing is a slow but a well established method for determining complete sanitation. However, culturing can take as long as 7 days to confirm the presence of pathogens. Therefore, culturing is not an effective tool for real-time evaluations of a surface, equipment, or work environment.

in minutes in many cases. In swab samples with low levels of
bacteria, a short incubation step may be required.
